Recipes for small machouyusers

As soon as the first teeth appear, the children need to chew so that the teeth grow and line up. If they are given too soft food, the alignment will not happen.
It must be remembered that the more masticated the smile will be.
For this reason we have asked Chef Jean-Luc Rocha to create appetizing, crisp and crisp recipes, special for our little Machouyusers.

2 Star Birthday Tea

1 & 6) Crunchy cookies

Preparation time: 15 minutes.

Cooking time: 15 minutes

Ingredients :

  • 50 g of flour
  • 40 g of granulated sugar
  • 30 g of butter
  • 1 pinch of salt
  • 15 g of crushed ginger snaps
  • 20 g of chocolate chips
  • 20 g of chopped hazelnuts
  • 1 egg yolk
  • 1 tsp. baking powder

Preparation:
Mix the flour, baking powder, sugar and salt.
Mix the melted butter and the egg in a bowl.
Add it to the mixture in one go.
Add hazelnuts, chocolate chips and the crushed ginger snaps.
Mix everything together with a spatula.
Roll out the dough to a thickness of 0.5 cm, leave it to rest for 1 hour and cut into 10 cm long fingers.
Bake for 15 minutes at 175°C

2) Chocolate shortbread biscuits

Preparation time: 15 minutes

Cooking time: 15 minutes

Ingredients :

  • 125 g of butter/li>
  • 100 g of icing sugar
  • 5 g of salt
  • 50 g of egg yolk
  • 150 g of plain flour
  • 75 g of potato starch
  • 20 g of cocoa powder

Preparation:

Beat the butter, salt and icing sugar with a mixer. When the mixture is fluffy add the egg yolks. Sift all the dry ingredients and add to the mixture, mix again, without overworking the dough.
Roll out the dough to a thickness of 0.5 cm, leave it to rest for 1 hour and cut into 10 cm long fingers.
Bake for 15 minutes at 160°C

3) Plain shortbread biscuits

Preparation time: 15 minutes
Cooking time: 15 minutes

Ingredients :

  • 120 g of cold butter
  • 2 g of salt
  • 90 g of icing sugar
  • 30 g of ground almonds
  • 50 g of egg yolk
  • 60 g of plain flour
  • 175 g of cake flour

Preparation:
Beat the butter, salt and icing sugar with a mixer. When the mixture is fluffy add the egg yolks. Sift all the dry ingredients and add to the mixture, mix again, without overworking the dough.

Bake for 15 minutes at 170°C

4) Chouquettes

Preparation time: 15 minutes

Cooking time: 15 minutes

Ingredients :

  • 100 g of water
  • 100 g of milk
  • 4 g of salt
  • 4 g of sugar
  • 100 g of butter
  • 130 g of flour
  • 200 g whole egg

Preparation:
Bring the milk, water, salt, sugar and butter to the boil in a saucepan.
Take the pan off the heat and sift the flour into the mixture.
Return to heat and dry on low heat, stirring with a spatula for 2-3 minutes until a thin crust forms at the bottom of the pan.
Put the dough into the bowl of a food processor fitted with dough hook and run a few minutes.
Add the eggs one at a time and wait until the dough is smooth before adding each egg.
Using a forcing bag with a 5 mm nozzle, pipe the the dough onto a baking sheet and decorate with dried fruit, chocolate chips, etc.
Bake for about 15 minutes in a preheated oven at 170°C without convection.
Store in an airtight container

5) Green tea shortbread biscuits

Preparation time: 15 minutes

Cooking time: 15 minutes

Ingredients :

  • 2 egg yolks
  • 100 g of caster sugar
  • 115 g salted butter
  • 150 g of flour
  • 10 g of baking powder
  • 4 g of matcha tea
  • A few drops of green food colouring

Preparation:
Beat the egg yolks, sugar and butter with a mixer. When the mixture is creamy, add the dry ingredients and roll the dough to a thickness of 0.5 cm, leave to rest for 1 hour and the cut into 10 cm long fingers.
Bake for 15 minutes at 160°C

P.P.P. Brunch – Pomme Poire Pain d’épices (Apple – Pear – Gingerbread)
For 4 people
Preparation time: 5 minutes

  • 4 slices of gingerbread
  • 1 green or red apple, according to your tastes
  • 1 williams pear for example, sweeter and sweeter
  • 1 small pot of white cheese
  • 1 tsp. red sugar
  • Applesauce, pearsauce … can be an alternative to cheese.

Remove the crust from the gingerbread and cut into chips and bake at 140 ° C for about 20 minutes (you can keep the gingerbread in an airtight box for the following days)
Wash apple, pear and dry thoroughly. Cut them into quarters and remove the seeds from the fruit, especially keep the skin that will bring color and make it all even more appetizing.
Mix the white cheese with the sugar and lay on a plate harmoniously, together with the white cheese or fruit compote.

Chicken Chips
For 4 people
Preparation time: 15 minutes
Cooking time: 5-10 minutes

  • 2 white farm chicken or red Label
  • ½ sachet of commercial muslin flakes
  • A puree of carrot, zucchini, or a sauce of your choice
  • 2 whole eggs
  • 1 little salt
  • 100g of rice flour (more digestible) or replace with flour
  • A few tomatoes or grapes tomatoes

Break the chicken strips:
Cut the chicken breasts into small strips of 1 cm section and set aside.
Beat the eggs in a container with a little salt. Lightly season the chicken strips and roll them into the flour, soak them in the beaten eggs and coat them with potato flakes.
Roll them gently in your hands and set aside on a plate.
At the time of the meal, 2 possibilities:
Either fry a few minutes until staining and drain on paper towels.
Either cook them in the hot oven (180 ° C) for 10 minutes.
Serve immediately with a few tomatoes and a vegetable puree or a sauce of your choice.

The Chewable Egg
For 4 people :
Preparation time: 10 minutes
Cooking time: 5 minutes

  • Cheese chips
  • Country bread chips
  • Fries of cereal bread or dried fruits
  • 4 eggs

Cut large sticks of bread, cheese, make a few natural or cereal puff pastry and cook the eggs 5 minutes in salted boiling water.
Dress nicely and taste with your fingertips …

Cereal bars
For about 10 bars:

  • 50 g of unrefined cane sugar
  • 50 g of honey
  • 100 g of butter
  • 100 g dried fruit of your choice (apricots, raisins, prunes, etc.)
  • 250 g of kamut wheat, quinoa or spelt flakes

Preheat the oven to 160°C
Melt the sugar, butter and honey in a saucepan. Then add the dried fruit and flakes, mixing all the time.
Divide the mixture into oblong silicone moulds, press the mixture down into the mould and bake for 15 minutes.
Cool the bars in the refrigerator and turn them out when they have hardened properly.

Croque Vegetables
A crunchy recipe
Preparation time: 15 minutes
For 4 people
Ingredients:

  • 4 carrots
  • 1/2 cucumber
  • ¼ of cauliflower
  • 8 radish
  • 8 Cherry tomatoes

Preparation of the vegetable croque:
Peel the carrots
Keep 2 carrots and cook them in boiling water or steam, once cooked mix them, this will serve as sauce accompaniment.
The other 2 carrots and the cucumber. Cut them the size of a fry
Wash and wipe cherry tomatoes and radishes.
Wash and cut the cauliflower into small heads.
